“Wine, Wine, Wine by Erica and the Whinettes” Esmigiel’s photos around Paganico, Italy (vacation)

Entry from: Paganico, Italy Entry Title: “Wine, Wine, Wine by Erica and the Whinettes” Entry: “(Erica) Today we have our 2nd and last wine tour – this time at Banfi (thanks Blair and Fran for making this happen!!!!!!). Like Tenuta di Arceno, this vineyard was about a 45 minute drive from our villa. The difference is that Banfi is HUGE and the tour was many of several for the day. We had about 10 other folks in our tour and our tour guide, Micki, was great. Micki explained that Banfi has over contiguous 8000 acres and produce a variety of wines and several million bottles of it a year! Their facility is meant to mass produce and their process is clean and tightly run. For their highest end Brunello (DOCG) and Super Tuscan wines – they have a different; hand picked and sorted process for producing wine. This system is fairly new – within the last 3 months – and was fun to watch the process in action. The left overs from the grapes includes grape seeds and “must” – grape seeds used to make grape seed oil and must used to make balsamic vinegar. Impressive! Nearly nothing goes to waste. After the official tour we ask Micki if we can see the Balsameria; where the balsamic vinegar is aged….AMAZING! l had no idea their vinegar is aged 12 years and is stored in various wood barrels starting with Oak
